How to Keep Spaghetti From Falling Through the Grill

Now that I got your attention lets talk about some Great Italian Grilling to start off the
Summer. Unfortunately it does not include grilled spaghetti though spaghetti squash is always an option. This is the time of the year when we abandon the kitchen for the great outdoors. It's time to get that rustic feeling deep down inside when you grab a piece of meat or fish and throw it on an open flame.

Cooking Italian food in your kitchen is one thing but, cooking Italian food on the grill adds a whole other dimension of flavor. Italian food like many other Mediterranean foods got it's start on an open flame. Italians from Sicily to Rome grill seafood on a regular basis. So there is no reason why you should not give it a try. It's simple and uncomplicated just as long as you follow a few easy steps. First make sure your grill is lightly coated with oil before placing any fish on the grill. This will avoid sticking and having your fish fall apart when you try to turn it over. Second make sure your grill is nice and hot before you begin.

Here's an easy to cook seafood recipe for Grilled Scallops with Vegetables over a nice plate of angel hair pasta for you to start off with. If you feel it's to much trouble to fire up a grill for a few scallops then by all means throw on a couple of t-bones instead.

Yes you will have to go back into your kitchen to make the pasta and a little aglio e olio sauce but it's worth it.

· 8 medium sized sea scallops

· 5 cloves of garlic, finely chopped

· 1 tsp of dried oregano

· 1 small red onion, cut into half inch slices

· 6 asparagus spears, peeled

· 1 small zucchini, sliced thin

· 2 large Portabello mushrooms

· 3/4 cup of extra virgin olive oil.

· 2 Tbls of butter

· Juice of one lemon

· 1/2 tsp of salt

· 1/2 tsp of freshly ground black pepper

· 1 pound of angel hair pasta

· 1/4 cup of flat leaf parsley, chopped

PREPARATION

· Wash the scallops and blot dry with a paper towel.

· Place the scallops in a large plastic bag.

· Pour in 1/4 cup of olive oil, 3 cloves of the chopped garlic, and the oregano and refrigerate for around 4 hours.

· Remove the scallops and string them on 2 metal skewers.

· Season with salt and pepper.

· Brush the vegetables with some of remaining 1/2 cup of oil.

· Prepare your grill.

· In the meantime cook the angel hair pasta in 6 quarts of boiling salted water until al dente. Around 5 minutes.

· Grill the vegetables first.

· The onions on indirect heat for about 8 to 10 minutes turning once halfway through.

· The asparagus on direct heat for 6 to 8 minutes turning once halfway through.

· The zucchini on direct heat for 6 to 8 minutes turning once halfway through.

· The mushrooms on direct heat 12 to 15 minutes turning once turning once halfway through.

· Cut the vegetables up into smaller pieces.

· Grill the scallops on indirect heat for about 3 minutes on each side.

· Plate the pasta and place the vegetables on top with the scallops.

· Sauté the rest of the garlic in a small pan in the remaining oil and pour over pasta.

· Squeeze the lemon all over and garnish with parsley.

Italian Salad of Tomatoes and Sweet Onion with Roquefort Dressing

Tomatoes and sweet onion with Roquefort dressing is a traditional Italian salad that easily lends itself well to Italian meals such as Osso Bucco and to lighter meals such as salad and Minestrone soup. Popular Italian restaurants such as Olive Garden serve similar meals of soup and salad.
You can find this simple salad served in New York at some to the finer Italian restaurants as well as on the tables of many Italian families around the world. The Roquefort cheese gives a strong distinctive flavor that pleases even the pickiest of salad eaters. 
The beauty of this Italian salad is that it is so versatile that it can be served with just about any meal.
Ingredients
Ripe tomatoes
Sweet onions
Basic Italian Dressing
Green scallions
Roquefort cheese
Dried oregano
Salt
Pepper
Direction
Slice ripe red tomatoes and sweet onions very thin. Place four tomato slices on each plate. Over the top of the tomatoes lay the onion slices. Drizzle over the top Basic Italian Dressing. Place the two green scallions along the edge of the plate. Crumble the Roquefort cheese over the top and sprinkle with dried oregano. Season to taste with salt and pepper.
Basic Italian Dressing
6 Tbs extra virgin olive oil
1 clove garlic, mashed
2 Tbs red wine vinegar
1 tsp salt
1 tsp fresh ground pepper
Diretion
Place all salad dressing ingredients in a small bowl. Whisk together with a wire whisk until well blended.

Recipe - Pasta and Cauliflower, a Sensational Italian Dish

This is a dish that before you try it, doesn't sound as if it will work, but I can assure you that if you do it correctly then you will be very satisfied with the result. As always the recipe was given to me by eighty year old Italian my nonna. Here is what you need.
Spaghetti; about one hundred to one hundred and twenty grams
A cauliflower.
One medium onion. (Red if possible)
Extra virgin olive oil. (Don't skimp on this, buy something expensive)
A tin of peeled Italian tomatoes. (If you have the machine to peel them, choose fresh tomatoes)
Some diced beef.
One teaspoonful of salt.
Stage one. Pour enough olive oil to cover the bottom of a pan, add a chopped onion, the full teaspoon of salt, and the cubes of beef. Fry slowly until the onions are just going brown and add water and a tin of tomatoes. Alternatively you can use the same amount of peeled fresh tomatoes, but to be perfectly honest, I prefer the peeled tin variety. Bring to the boil and then simmer. As the mixture reduces, add more water, and keep on a low heat for about half an hour.
Stage two. Remove the cubes of beef and put them in a container to eat separately at a later date. The beef will now be beautifully tender and can be used as a second dish to serve with the pasta. Cut the cauliflower into four, and add the heads (no leaves or root) to the mixture. Add water if you need, so that the cauliflower heads are covered. Bring back to the boil and simmer for about ten to fifteen minutes.
Stage three. Measure out your spaghetti, and then break the sticks into small pieces about the size of you little finger. Add the spaghetti to the mixture; add water if you need, and bring to the boil. When the mixture is boiling, turn the heat down to simmer and leave until the spaghetti is cooked. This normally takes about twenty minutes but keep checking. The dish is now ready to be served.
If you like your food spicy, you can add some ground chilli pepper to give it a bite.
You don't find dishes like this in any Italian restaurant, but you will in most homes in the South of Italy. The recipe is originally from Sicily and there are some variations on how you cook it. Serve with some sparkling white wine, and have the beef cubes for after with a green salad. A perfect lunch; what more can I say other than off you go and cook it.

Low Fat Pasta: Why and How to Make it.

Making your own pasta is not difficult. It's actually very easy to cook.
But you may wonder why would you make your own pasta, when you can buy it pre-packed, and ready to cook?
Well, one reason is that by making your own, you eat fresh pasta. There is a difference of taste and texture between fresh pasta and pre-packed pasta.
But there is another reason: if you make your own pasta, you may want to use nutritius ingredients, ensuring that your pasta not only tastes good, but it is also low in fat, and generally good for you.
For instance, you may want to make your own low fat pasta with unrefined flour, ensuring that your pasta is rich in fibre and B complex Vitamins.
Finally, learning to make your own basic pasta dough is the first skill towards preparing other (more advanced?) types of pasta dishes like lasagna, raviolli, tortellini, and that type of thing.
It's not such a difficult thing to do, and it can be a fun process.
You see, normally you make pasta with refined wheat flour, eggs and salt.
But if you want low fat pasta, you need to use water instead of eggs, and you have to give salt a miss.
This recipe makes about 750 g of low fat pasta (about 1.5 pounds), and it takes about 50 minutes to make.
To make your own low fat basic pasta you need:
* 500 g (1 pound) of strong wholemeal flour
* 275 ml (a bit over a cup) of water.
This is what you do:
First, put the flour in a large mixing bowl and make a well in the middle (like a volcano, sort of thing).
Then, pour in the water, and mix with a knife till the dough binds.
After that, you start mixing with your hands and knead it till all the flour is evenly incorporated into the dough.
Move the dough to a kitchen bench, and knead it for about 10 minutes, till it becomes smooth and elastic.
Next, put the dough into a plastic (zip lock) bag and leave it there for about 30 minutes.
Then, take a quarter of the dough and roll it out by hand on a slightly floured surface. Roll it very thin. Leave it to rest and dry before using it.
Freeze whatever you don't use. It will remain good for up to 3 months.
You will be able to use this basic low fat pasta to make many of my delicious recipes.

Easy to Cook Recipes

Easy malai kulfi


Ingredients
 2 cups whole milk
 1/2 cup condensed milk
 1/4 cup dry milk powder
 2 teaspoons white sugar, or to taste (optional)
 1/2 teaspoon ground cardamom
 1 pinch saffron threads
 1/4 cup chopped pistachio nuts




Directions


1. Stir the milk, condensed milk, and dry milk powder together in a heavy-bottomed pan and bring to a boil. Add the sugar, cardamom, and saffron to the boiling milk; reduce heat to low and simmer, stirring frequently, for 10 minutes. Remove from heat and allow to cool to room temperature; fold the pistachio nuts into the mixture.
2. Pour the mixture into popsicle molds and freeze until solid, about 1 hour

APPLE AND ALMOND HALWA RECIPE

Ingredients

 4 Apples (grated) 
 1 cup Almonds 
 2 Green Cardamoms 
 2 inch stick Cinnamon 
 1 cup Milk Powder 
 Ã‚¾ cup Sugar 
 Ã‚¼ cup Pure Ghee




How to make Apple and Almond Halwa:

 Parboil the almonds and blend to make a paste.
 Heat oil or ghee in a thick bottom pan and add grated apples and sugar to it and cook stirring till the texture begins to change.



It is essential to add sugar along with the apples, so that the apples do not get completely mashed.
Add cinnamon sticks and whole green cardamom and stir it well. Add the almond paste and stir cook on high heat for 2-3 min.

Reduce the flame and add milk powder. Stir and cook on low heat till you get halwa consistency. Serve hot at room temperature.


Rose ice cream

Ingredients
 1 pinch saffron
 2 tablespoons warm milk
 1 1/2 quarts vanilla ice cream, softened
 1 1/2 tablespoons rose syrup
 1/2 teaspoon ground cardamom
 1/4 cup chopped pistachio nuts


 
Directions
1. Add the saffron to the warm milk and set aside for 15 minutes.
2. Combine the softened ice cream, saffron with milk, rose syrup, cardamom, and pistachios in a large bowl. Stir until the ice cream is smooth and pink in color. Scoop the ice cream back into the container and freeze 2 hours, or until ready to eat.

How to make Tiramisu , Quick and Easy recipe

TIRAMISU

  • 40 to 50 Ladyfingers
  • 8 oz (226 g) Mascarpone
  • 6 Eggs
  • 3/4 Cup Sugar (6 fl oz / 170 ml)
  • 1 Cup (8 fl oz) Heavy Whipping Cream
  • 1/2 Cup (4 fl oz) Cognac
  • 1 1/2 Cup (10 fl oz) Espresso Coffee
  • 1/4 Cup Cocoa Powder
PREPARATIONS:

1- Separate the egg yolks and whites.

DIRECTIONS:


1- Whisk the egg yolks in a bowl.
2- Add the sugar and continue whisking until creamy.
3- Add the mascarpone and continue whisking until well combined.
4- In a small bowl, whisk the heavy whipping cream until stiff.
5- Add the whisked heavy whipping cream to the egg yolks bowl, and mix using a spatula.
6- Whisk the egg whites until stiff and add to the bowl and mix.
7- In a separate bowl, mix the liquor (Koniak) and espresso.
8- Dip ladyfingers into the liquor mixture and lay them onto a large nonstick bakeware.
9- Add half of the cream mixture on top of the ladyfingers, spread evenly to cover all surface.
10- Dust half of the cocoa powder on top of the cream.
11- Repeat step 8 and 9 to make another layer and sprinkle the rest of the cocoa powder on top of the cream.
12- Cover the bakeware and put it in a refrigerator for 24 hours.

Lemon Pepper Shrimp Scampi


Ingredients

1 cup uncooked orzo
2 tablespoons chopped fresh parsley
1/2 teaspoon salt, divided 
7 teaspoons unsalted butter, divided 
1 1/2 pounds peeled and deveined jumbo shrimp 
2 teaspoons minced fresh garlic
2 tablespoons fresh lemon juice 
1/4 teaspoon freshly ground black pepper 

Preparation
1. Cook orzo according to package directions, omitting salt and fat. Drain. Place orzo in a medium bowl. Stir in parsley and 1/4 teaspoon salt; cover and keep warm.

2. While orzo cooks, melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Sprinkle shrimp with remaining 1/4 teaspoon salt. Add half of shrimp to pan; sauté 2 minutes or until almost done. Transfer shrimp to a plate. Melt 1 teaspoon butter in pan. Add remaining shrimp to pan; sauté 2 minutes or until almost done. Transfer to plate.

3. Melt remaining 1 tablespoon butter in pan. Add garlic to pan; cook 30 seconds, stirring constantly. Stir in shrimp, juice, and pepper; cook 1 minute or until shrimp are done.
