To make it, they heat cheese curds in hot water until they form strings. After that, they're kneaded, stretched, and formed into balls. These balls are stored in salted water, so you should drain them well before you slice them and place them on your pizza. It's available as either one 4" ball or many balls that are less than an inch in diameter.

Burrata cheese.
For something truly decadent, look for burrata cheese. It's available in some high-end or Italian grocery stores. It's been popular in Italy for years but has only caught on in the United States recently. Burrata is basically a ball of hard mozzarella with a center of heavy cream. Mind Your Own Business (MYOB) - How to Set Up a Job Card

Setting up Jobs allows you to track all the expenses and income you have entered against a project. You are able to view Profit and Loss reports throughout the Job and on completion of the Job. This allows you to see how the Job is going and if you are making a profit. You can also set up Budgets for each Job to monitor over-runs or any unexpected expenses that may occur. Budgets are very handy for seeing how well or how well not, the Job is doing and gives you solid information for quoting or budgeting in the future.

In the Command Centre, click on Lists at the top on the window - Jobs - New. In this window, the following options are displayed to enable you to enter a new Job. A Header Job would be used if you had several Jobs under one main Job. Fox example, a Construction Company is building several apartments on one site but they want to record the transactions for each apartment separately. A Detail Job relates to the individual Jobs or can be used for a single Job that does not require a Header Job. The Job Number could be a number that you use in a sequence, sourced from a Job number book, it could also be alpha numeric or simply a shortened version of the Job Name. The Sub-job Of is used in conjunction with the Header Job. To complete the card fill in the Job Name and Description.

The check boxes on the right hand side of the window relate to: the option of making a Job Inactive if you have completed the Job and longer wish to have it displayed as an Active Job. The Track Reimbursables check box relates to expenses and purchases that you have made on the Job that you want to be able to re-charge on to a Customer. This option is available in the Enter Sales window and can also be used through the Time Billing window. As expenses and purchases are entered into MYOB they are allocated to a Job and a summary of these purchases are grouped to each Job. When the time comes to invoice the Customer, in the Enter Sales window you simply click on the Reimburse button at the bottom of the invoice screen and all the expenses and purchases will come up for that Job for you to on-charge. It is in this window that you can also Mark Up the expenses and purchases, should you wish to add a margin to your purchases.

To be able to Track Reimbursables you must also Link the Customer to the Job. Simply in the Job Information window, drill down on the blue arrow and find the Customer that the Job is for. If you haven't entered the Customers details yet, you can also do this by simply clicking on the blue arrow, then click on New at the bottom of the screen and enter their details.

Other options available in the Job Information window include Percent Complete, Start Date, Finish Date and who is the Manager for the Job.

To check how a Job is progressing or to look at the transactions allocated to a Job go to Find Transactions at the bottom of the Command Centre and click on Jobs. Enter the Job Number / Name and a window will appear listing all the transactions. To look at a Profit and Loss report of the Job, go to Analysis at the bottom of the Command Centre, click on Jobs, enter the Job Number / Name and a report will display showing all the Income, Cost of Sales and Expenses that have been allocated to the Job and whether it is resulting in a Profit or Loss situation.

How to Apply for a Job

A job application is the first impression a potential employer gets of you, and it can make or break your chances. This means you have to be careful and do everything right.

Something to point out, all these guidelines are based on my experience as a hiring manager and an applicant. Following these guidelines perfectly won't guarantee that your application will get you anywhere, some manager look for some pretty strange things.

Application Form

Some jobs require an application form and some don't. When there is an application form, it asks for the information the employer most wants to know, like work experience. The most important thing is to include all the relevant information. Don't leave a field blank unless it's optional or you don't have any relevant information to include. Remember, it is illegal to ask about certain things during the application process, like ethnic background and religion.

Another important thing to do right is how you format the information in each field. If you format things like your phone number or your name (I have seen it) incorrectly, an employer is likely to assume you have poor communication skills. This means proper capitalization in text, proper grouping in phone numbers and proper layout of things like addresses.

Cover Letter

Sometimes entry level positions wouldn't require a cover letter but all higher level and professional jobs do. Your cover letter should be tailored to the specifically to the job you're applying for and, when possible, addressed directly to the hiring manager. A cover letter should be brief, generally one page and never more than two, and professional. You should clearly state why you think you would be suited to the position and the organization.

It's crucial that your spelling and grammar are correct. One spelling error could remove you from consideration instantly. Read over your cover letter at least once, probably twice, before it goes off to an employer.

Résumé

Your résumé is the core of your application and thus the most important. It's always a good idea to tailor your résumé to the job somewhat and you absolutely must format it correctly. (You've probably noticed a theme.) It should be separated into sections that deal with the things employers look for, like work experience and education.

Be sure to keep all your points brief. Hiring managers have a large volume of applications to review and only have a few minutes to look at each one. If you feel needs to be expanded on you can do so in your cover letter but only if it's particularly relevant.

Email Application

Even though email is usually regarded as quite casual, an email application is not. You generally don't need a separate cover letter, the email body can serve that purpose. All the same rules apply to the email that apply to a conventional cover letter. The subject line should always contain the position you're applying for.

Addressing the Hiring Manager

In cases where you know the name of the hiring manager, you need to address them properly. The rule of thumb is to start as formal as possible and get more casual when they indicate it's appropriate. Obviously, if all you know is a first name then it's appropriate to use it but if you know a surname then that's what you should use to start with. The only exception is when you have no indication of what the appropriate salutation would be, like if they have a unisex first name such as Alex. If you're applying to me, you should start by addressing me as Mr. Loewen and later, once I've demonstrated that I'm a fairly casual employer you could start addressing me as Steve or Steven if you'd like.

Application Method

Most job postings include how you should apply and all list at least one piece of contact information. When there's an application method listed, that's how you need to apply. Otherwise you could be eliminated without your application even being read. If there's only contact information, then the method is at your discretion, just be sure to do it properly.

Now we can move on to the ingredients to make the topping. First we need the tomato paste. At any supermarket there is always a large variety of any one food item so it's up to you and your budget to determine what brand to buy. Next we need a small bottle of oregano. I'd like to stress that what ingredients you'd like on your pizza are completely up to you and the ingredients we use in this article are only used as a guide. Next we choose some meat such as ham or bacon. Next is the cheese. To keep a bit of variety, consider some spinach or other vegetables.

Now we have all our ingredients, it's time to start making the pizza. First we will start with the crust. After cleaning and clearing a suitable work space we need a large bowl and measuring jug or cup. First, you remove 1 sachet of dry yeast from the box. Next put approximately 150ml of hot water into the measuring glass. Next put 1 tablespoon of sugar into the hot water and mix, making sure all the sugar dissolves in the water. Next fill the measuring cup with approx 350ml of cold water. This leaves the sugary water slightly warm in temperature. Next pour one sachet of yeast into the measuring cup. The yeast will react and 'eat' the sugar and a luke warm water temperature is ideal for the yeast to behave in this way. If the water is too hot or too cold the yeast will not react properly with the water and the dough will not develop properly.

After pouring the dry yeast into the measuring cup we stir the contents then let the mixture sit for a while whilst the yeast reacts with the sugar solution. Whilst this reaction is taking place we can move on to other ingredient preparations. In this case if you plan to use spinach or other vegetable, soak them in water for a short while to bring back some of the moisture and freshness lost whilst it was bagged and sitting on the supermarket shelf. Simply soak the spinach in a small glass filled with water. You can do this to any vegetable you plan to use that appears old and dry to bring back some of it's freshness.

To make pizza crust, first pour the entire 1 kg bag of flour into a large bowl. A 1kg bag of flour will make enough pizza crust for about 10 pizzas. So whatever pizza dough you have left over will be OK to keep for 1 or 2 days before using. Next add approximately 1 tablespoon of salt. Next add the yeast and sugar mixture into the flour and mix thoroughly. Much the same way you would knead bread dough. After kneading for 5 or so minutes place the crust dough back in the bowl and let sit for a few minutes while you prepare the other ingredients. First prepare the olives, draining away the liquid then slicing them up into small pieces. Leftover olives that we are not going to use can be put in an air tight bag and placed in the fridge for later use.

To do the chopping and dicing of food items for the pizza topping you need a good chopping knife and clean chopping board. During this time you can turn on your oven so it will be at the optimum temperature by the time the pizza is ready to be baked.

Set your oven temperature at 350 degrees Celsius. Next chop up any vegetables you are going to use. Next, cut up any meat you are going to use. Next, prepare the tomato paste. Now it's time to prepare the crust. To stop the crust dough from sticking to your working surface, sprinkle some flour on the surface. Then break off a piece of dough, large enough to make the crust for 1 pizza. If you want your pizza crust thin then you won't need as much dough than if you want the crust thick.

Experience will be your best guide as to the right amount of dough you'll need to make the size pizza you intend to make. Next, flatten out the piece of dough with a rolling pin to the size of your pan base. Next, place the dough in the pan base making sure it completely covers the bottom of the pan. Cut off excess dough with a rolling cutting knife or any other knife that will do the trick. The first topping is to spread tomato paste over the crust. Next place all other ingredients on the tomato paste. Then place in the oven for a period of 10 minutes or so. Cut into pieces with a rolling cutting knife and enjoy.

Are Plastic Food and Beverage Containers Safe?

Question: Have plastic food and beverage containers been proven safe?
Answer: No.

During the film's graduation party in THE GRADUATE, Mr. McGuire pulls Benjamin Braddock (Dustin Hoffman) aside to offer sage advice for his future. His future would be one word: "plastics."
Of course, we all know Mr. McGuire's advice and prognostication was correct. Plastics can only be made by man in his infinite wisdom, hence they are patentable. The profit in the manufacture of plastics has been huge. Plastics are everywhere. Plastic manufacturing now uses 4% of the world's oil production annually. Automobiles are now 9% plastic. It is of my special concern that more foods and beverages are being put into plastic containers. Plastics are ubiquitous now. They persist and accumulate in our society as their production exceeds their chemical degradation rate.

 Harmful chemicals from plastics are now commonly found in groundwater, waterways, and drinking water.While standing out in the summer heat in Phoenix, Arizona in 1981, my girlfriend asked me what was causing the film to form on the inside of the windshield of her new Mazda 626. She said that she had to wipe it off every morning so she could see to drive to work. I didn't know then. I do now! It was phthalates, the chemical that was added to the plastic dash cover to soften it and prevent cracking. I'm sure by now most of the phthalate has evaporated into our atmosphere and the Mazda is in some junkyard with a cracked up dash.

Phthalates are EDC's (Endocrine Disrupting Chemicals.) They are chemicals found in recycle codes #1 through #6 plastics. Another EDC (Bisphenol A) is in recycle code #7 plastics. All of these types of plastic EDC's interfere with the function of sex hormones receptors. In THE GRADUATE Benjamin was quite a stud. I wonder if he's now taking one of the popular drugs to treat erectile dysfunction, a disorder that has become one of the many epidemics in our new plastic world.

In 2003 a group of Croatian scientists reported that phthalates in plastics dissolved in various solutions. They used a variety of plastic items, including plastic food containers. After 10 days of sitting in distilled water, an average of 55.4 mg/ of phthalates from each kilogram of plastic "migrated" into the water. To a lesser degree the phthalates from plastics dissolved into acetic acid 3% (44.4 mg/kg) and 10% ethyl alcohol (32.3 mg/kg).

The Croatian study shows what Benjamin would suspect, if he took chemistry in college: Water is the universal solvent; and it dissolves even the primarily fat soluble phthalates. The more that you filter water to remove other toxic solutes, the more aggressive water becomes in its power to reach osmolar equilibrium by dissolving its non-inert containers.

What is also obviously missing from the Croatians' controlled, static testing model are the temperature variations that the plastic bottled water product goes through to get from bottling point to the mouth of the consumer. Transport trucks probably reach a very high temperature in the non refrigerated cargo areas that carry PETE (recycle code #1 plastic) bottled water in the summer. Heat facilitates the dissolution of phthalates into the water. Then the bottles may be stored for a much longer time than 10 days prior to consumption. Furthermore, freezing the containers produces micro-fissures in the interior surface of the plastic bottle container as the water expands, exponentially exposing more solute surface area. Traumatic handling or any motion of the package will further enhance diffusion. Applying the laws of physics, all of these factors clearly by extrapolation will increase the water dissolution of the plastic containers.

Fatty foods in plastic containers are even more problematic, as fats are absorbed differently and carry their phthalate solvents into our bodies more easily. Phthalates bio-accumulate because of their fat solubility. Phthalates concentrate in such fat organs in our bodies such as brains, prostates, testicles, ovaries, breasts and, unfortunately, breast milk. (The other popular food alternatives for infants are worse. Commercial baby formulas are loaded with the manmade phthalates.)

I think the worst example of food containment in plastic is milk. All milk except non-fat milk contains fat. Cow milk itself represents a major source of the fats ingested by the public, especially children. Cattle concentrate these chemicals by bioaccummulation because EDC's from plastics are ubiquitous in water and most animal food sources. Meat and dairy products are therefore a major contributor to this group of human food chain derived toxins, regardless of their containment. It is now irresponsible to add more phathalates to the products by putting the milk products in plastic containers that add MORE EDC's.

Cattle have intentially been "fattened up" by adding hormones AND unintentially "fattened up" more by the contamination of cattle food and water by EDC's. The combination of these chemicals passed on to the consumers in concentrated form in milk products will most likely exacerbate obesity in humans that consume them as well.

Our current scientific knowledge and common sense screams for an end to consumer purchase of milk bottled in plastics. Until milk companies have their products quantatatively analysed for these EDC's by competent independent laboratories, my strong recommendation is to avoid purchase and consumption of milk and dairy products contained in plastic.

Sadly, the Croatian authors' 2003 conclusions about the safety of plastics were: "These (exposure) levels would not present a hazard for human health, not even for a prolonged period of time." However, what was deemed acceptable levels of phthalates in 2003 now is recognized as "crystal clearly" too high.

Selective interpretations from the ACC (American Chemistry Council) lead to this erroneously high level being "set" for past toxicity standards. The ACC is an "industry group" advisor. It's much like the wolf guarding the henhouse. Thanks to the ACC efforts, control regulations placed upon this chemical class are minimal. An ongoing perpetuation of phthalate approval for use in virtually everything, including containment of food, has resulted. In fact, the perpetuation of these mythological high safety standards has resulted in the majority of our food being wrapped or contained in plastics that leach EDC's into our foods.

The ACC's Phthalate Esters Panel is made up representatives from BASF, Eastman Chemical, Exxon-Mobil Chemical, Ferro, and Teknor Apex Corporations. After graduating, Benjamin could have gone to work for any of these companies to share the wealth that plastics manufacturing have reaped, instead of hanging around and sporting Mrs. Robinson for the summer!

I love one of the rationalization examples the ACC makes on their PHTHALATES INFORMATION CENTER webpage: "Thanks to phthalates, your nail polish doesn't chip." I wonder if they are aware of the "unexplained" high rate of breast cancer in manicurists. I also wonder if they are aware that most breast tissues and breast cancers have sex hormone receptors that are acted upon by the EDC's found in plastics.

To further confuse the public, the ACC webpage also redefines the PRECAUTIONARY PRINCIPLE which in its un-perverted definition simply is: A (chemical) should not be considered safe until it is proven safe. Environmentalists who are trying to unravel the cause-effect relationships of environment chemicals, to the otherwise unexplained epidemics of various diseases now affecting man as well as every species on our planet, encourage its application. The ACC's watered down version suggests that cost effective, fearless risks are worth taking.

Can the ACC keep up the phthalate safety illusion forever? The American Tobacco Association almost got away with it!

We now know that EDC's, like hormones themselves require very minute amounts to have physiologic impact. EDC's are active in parts per trillion! For example, the usual adult maintenance dose of levothyroxine, a drug to replace depleted natural thyroid hormone in hypothyroidism, is 1.6 micrograms/Kg/day. Why would I even think about saying that a dose in the milligrams (1000 times as much as a microgram) of a known EDC would be safe, especially for a child or developing fetus?
We now know that phthalates also work in synergy with chemicals in other classes to exert "more than additive" physiologic effects.

Previous experiments in rodents showed that high levels of phthalates interfer with testosterone during gestation resulting in birth defects of the genitalia, testicular cancer, and infertility in the rats.
The ACC inspired acceptable level of phthalate myth should be blown out of the water with a recent study completed by the University of Rochester School of Medicine and Dentistry. This study of 85 human infant boys reported in May 2005 showed that phthalate levels found normally in the general population adversely influenced sexual development. The phthalate exposure these children had correlated with smaller penis size and incomplete testicular descent, which is a condition that greatly increases the risk of testicular cancer if left untreated.

Solution 1 - Choose glass containers over plastic for purchase and storage of food and beverages including milk and water.

American children can consume several milligrams of phthalate each day.

I wonder if THE GRADUATE's Mr. Robinson noticed that most of the teenage girls now-days have bigger breasts than his seductive wife (gynecomastia), and that they begin thelarche (breast development) and menarche (menstruation) at a significantly younger age, or that many more have an endocrine pathology called PCOS (polycystic ovary syndrome).

The chances of a woman getting breast cancer in her lifetime has probably gone from a risk of less than 1 in 10 (10%) before THE GRADUATE was made to a 1 in about 7.5 (13.2 %) rate today.

The choice to avoid food chain plastics is a "no-brainer" when you understand how these chemicals persist and accumulate in our environment, and how they function in our bodies!

Solution 2 - Choose stainless steel containers over plastic for storage of food and beverages including water.

Unfortunately, we are past the point of no return with phthalates. Just like cigarettes I think we'll have to live as prisoners with their impact on future generations. The only defense we have at this time is to individually choose to avoid them when we can, to mitigate their effects on our health.

Phthalates clearly act upon hormone receptors in both men and women. A concern is the potential phthalate impact on breast and other hormone sensitive tissue in human females, but phthalate's demasculinizing potential on males is more of a threat to all species on the planet.

Unlike Mr. McGuire, I think we can choose a better future by avoiding his "one word." We should start by trying to reduce plastics in our food chain exposures.

Bottom line:
I would strongly advise consumers to purchase beverages and non-solid food products packaged in glass rather than plastic if given the choice.

Bread Without Yeast - Baking Soda Bread

There are many reasons that yeast must be excluded from a diet. Whether prescribed by a doctor or a simple allergy mandates it, a yeast free diet is achievable. Diets have to be drastically altered due to the widespread use of yeast in modern day cuisine. One of the most difficult foods to become accustomed to is bread without yeast. As nearly all breads are raised with the use of yeast bacteria, it is with great difficulty that one obtains bread without yeast and not sacrifice on taste.

Breads without yeast, or any other oxidizing chemical or substance, are characteristically flat, hard, and dry. Breads such as Jewish "matzah" bread or some types of sourdough are baked in such a fashion as to obtain crusty, flat exteriors. However, breads such as these differ exceedingly from common sliced bread found at the market or grocery store.

To obtain a fluffier, moist, raised bread without yeast similar to store-bought bread, it is necessary to bake bread using a substance that will add air to the dough and achieve a softer, taller loaf. As a substitute for yeast, there are several other readily available ingredients one can use to bake their own bread without yeast present. Such ingredients as beer, baking soda, or unsweetened carbonated soda beverages all produce a raising effect in homemade breads. (Note, however, that beer is not recommended for baking bread without yeast, as yeast bacteria are used in the production of all beers).

The following is a simple recipe of a bread without yeast. Rather, it incorporates an unsweetened soda as the leavening agent.

Ingredients
2 1/3 cups self-rising flour
4 tablespoons white sugar
1 (12 fl ounce) can or bottle of unsweetened carbonated beverage

Directions
Preheat oven to 350 degrees F. Grease one 9 x 5 inch pan.
Combine the sugar, flour and carbonated beverage. Mix well and place into the prepared pan.
Bake at 350 degrees F for 40-45 minutes.

Chilli Chicken Recipe

Deep-fried chicken served with spicy sauce is given a term as  chilli chicken. It is a favorite dish in . Delicious in taste and looks really attractive while served.

Ingredients used for this recipe:

500 grams of chicken breast, 2 tablespoons oil, garlic, chopped 5-6 cloves Ginger, chopped 1 inch piece of tomato ketchup 2 tablespoons chili sauce 2 tablespoons salt to taste, cornstarch / 1 tbsp cornstarch, red pepper, 1 teaspoon, Egg 2, MSG 1 / 4 tl, scallion greens 2-3.

Preparation Method for Chilli chicken recipe:

Cut the chicken for one to one and a half inches pieces. Heat oil pan, add chopped garlic, ginger and fry for two minutes. Add ketchup, chili sauce and half of the mix. Add one cup water and mix.

If the mixture to a boil, reduce heat and simmer for 5-10 minutes. Meanwhile by taking pieces of chicken in a bowl. Add salt, remaining chili sauce, cornstarch, crushed red pepper in half and mix well. Add whole egg and mix well.

Heat enough oil in wok and fry the chicken pieces and make sure that they do not overcook.

Fry over high heat for 02:58 minutes in color. Drain on absorbent paper. Add the remaining salt and crushed red pepper sauce and mix well. Add MSG, and cornstarch mixed with water.

Cook while stirring, until the sauce thickens. Arrange on plate with fried chicken. Beat in eggs.

Remove sauce from heat and slowly add the beaten egg flow. Mix gently and pour over the fried chicken. Garnish with scallion greens and serve hot.

Tips used while preparing:

1. Preparation time: 15-20 minutes

2. Servings: 4 persons

3. Cooking time: 25-30 minutes

Recipes and Cuisine

Ireland is known for its lush green lands, which are of course excellent for the growing of crops and the grazing of livestock. Traditional Irish food is hearty, wholesome, fare made from local produce - recipes may be simple but they are both tasty and satisfying!

Potatoes are also a prominent feature of Irish cooking. They were introduced in the late 17th century, and have become the staple crop of Ireland. Oats and barley are also grown, and have been for many centuries. Popular meats include lamb and pork.

Of course, with the island of Ireland being surrounded by sea, fish and seafood is also popular. Ireland is particularly known for its langoustines (known as "Dublin Bay prawns") and oysters, the latter often eaten with Guinness at the many oyster festivals around the country each year. Popular types of fish include salmon and cod.

Some popular traditional  dishes include:

- Colcannon - Mashed potatoes with garlic, cabbage or kale (a type of cabbage closer to the plant's wild origins).

- Champ - Mashed potatoes with chopped spring onions, butter and milk.

- Irish stew (Irish: Irish Gaelic: Stobhach Gaelach) - A stew made from lamb or mutton, with potatoes, onions and parsley. Barley, carrots, parsnips or turnips may also be added in some variants of the recipes. Irish communities in other countries (such as the United States), have adapted to use locally available meats (for example, substituting beef for lamb), or by adding extra ingredients (such as Guinness or paprika) to create new flavors.

- Coddle - Boiled pork sausages with bacon, potatoes, onions and optionally barley. The ingredients are cooked in the stock that comes from the sausages and bacon. Salt, pepper, and parsley are added for flavor.

- Bacon and cabbage - Irish Americans often make a similar dish from corned beef and cabbage.
Ireland is also home to its own unique types of bread. These include:

- Soda bread - A bread made using baking soda instead of yeast. Whole wheat soda bread is known as "wheaten".

- Blaa - A very soft white bread roll, covered in layers of flour, that is unique to Waterford City.
- Irish potato bread (also known as "fadge", "potato cake", "potato farls", "slims" or "tatie bread") - Unleavened bread made from a combination of potatoes and wheat flour.

Having a Vintage Nyonya Wedding in Modern Times

The present day Nyonya Wedding, can be described as "trying our best" to relived some gaiety and splendor of the good old days. When my daughter Uvaraani (of mixed parentage) was preparing for her wedding, we had to consider many factors. Reason being she has the opportunity to unite many Indian and Chinese cultures and traditions for her big day. We went through the Indian and Nyonya Chinese ceremonial rites with our elders, and boy were we in for some surprises.

Consulting the Elders

It was a great experience talking to some older Nyonya aunts who still remembers the good old days. The smells that triggers the memory leads us to consider reviving this hundred year old Nyonya or Peranakan heritage. Mostly the discussion was aimed at what can and can't be done in this present age as Nyonya on the whole, the culture and people are a dying breed. Ceremonials rites for the bride is endless.

Words like Kor Char Ay Lang (olden days people) and Tong Kim Ay Gee Nia (kids nowadays) seems like we are moving from "one extreme to another".

Olden Days Brides

In the days of our grandparents, the young girls were protected and hardly knows the outside world. The only times they were allowed to go outside is on "Chap Goh Mei". (15th day and last of Chinese New Year is to throw oranges into the sea, in the hope to get good husband).

They are dressed in the prettiest and with an entourage of older brothers and chaperon of protective hawks of old aunts. You can imagine how excited they will be when there is a marriage proposal, young and excited and obedient to their parents instruction. There is no falling in love for fear of marrying into the wrong class or society. Nyonya families even imported brides from China or sent their daughters to China to find husbands.

Those days the Straits Settlement Nyonya girls of marriageable age were taught to sew and cook. Sewing and embroidering items for personal use. She has to practice till she gets it right to prepare for her wedding ceremonies. And believe you me, it is a long list. For her wedding, personal items like lacy handkerchiefs, wardrobe that include her wedding gown. Items for wedding bedroom sets like pillow cases, bed hangings and decorative panels used in the bridal chamber.

Skills to Acquire

The most important item she has to learn is beadwork, using "manek" (beads) and sequins, making shoes, sandals and slippers. All this is part of showcasing that the bride is well taught and well bred. The prospective bride prepared a range of slippers to be presented as part of her wedding dowry, to the groom and his family. Even Emelda Marcos would have lost out in her showing off her collection of beaded shoes. Then a special pair must be made to be worn on the third day of the wedding, that is the day she comes to her father house for the banquet prepared for the groom and his entourage.

Present Thoughts and possibilities

How would we ever get an opportunity to have a Nyonya wedding ceremony as the girls are now working girls. They hardly had time to sew their beaded shoes, embroidered bedcovers and pillow cases, let alone her own wedding costume. A young Nyonya's worth as a bride is judged by her skills in beading, embroidery and proper upbringing as a classy Nyonya lady.
How do I ask my daughter whether she is a virgin to do the "Chiau Tau" (wearing a traditional gown to pay homage to ancestors announcing the wedding). She would have thrown a fit if I asked her that. Such remark would be considered abusing her right while in the old days, the parents has every right to dominate their children.

Some rites and rituals of the Nyonya Wedding

It would take twelve days to get married with all the customs and traditions to follow. Grooming the bride for the wedding takes a few days. Nearing wedding days, all needlework, sewing and embroidery of personal items and whatever you need for the bridal chambers must be completed.
The challenge to grooming the bride coupled with wedding blues are at its peak. If you happened to get a bride who is excited about the whole wedding proposal, it seems a happy occasion. There are times you get an unwilling bride as she is forced to marry for the sake of broadening her family heirloom or kongsi (clans) business.

She took me to our father's room and from the closet, drew out a photograph of a young man in traditional Chinese clothes wearing a close fitting black hat. The Match Maker

Before any rites or rituals can be followed, a Seng Keh Mg (Match maker, one with a gift of the gab) must be hired. She bosses all around to ensure all rites and rituals are followed, if not she will be able to tell you the consequences of not listening to her. With that, she advised what is to be done and you jolly well follow.

Things she would advised include fixing the dates for all ceremonies like Sang Jeek Sang Jeek is gifts presentation day or dowry to the bride. The Bridal Bed arrangement include chamber pot placement, ornaments and silk curtains, oil lamps or candles to keep lighted before the wedding night is over.
A tray of sweet goodies for the newly weds to eat and to get to know each other. Hair combing Ceremony, prayers to Jade Emperor, Chneoh Tau, (purification ritual for virgin), ancestors worship and eating Glutinous rice balls without chewing and Kooi Bin (Face Threading).

She is the master of ceremonies and her main role in Tea Ceremony is calling relatives from the older generation till the youngest. She is even there as the bride wakes up in the morning to carefully fold the pajamas.

Having listen to all the good advises from my Nyonya elders, we decided to pick what is necessary term as important and doable for present day working Nyonya wedding.

Present Day Wedding Plans and Realities

For the parents and relatives, my daughter chooses to have the tea ceremony conducted by Penang Nyonya Heritage Wedding Planner Micheal Cheah. Same time we choose a traditional hundred over years old heavy embroidered wedding gown for performing the tea ceremony.

Same time, not to disappoint the Indian relatives, we combined both Indian and Chinese Nyonya tradition into her wedding. The day ended as a lifetime experience for the newly weds, parents and relatives.

We were glad we could combined an age old heritage Nyonya wedding into unique modern day affair.

1 Easy and versatile: Grilled Fish with Lentils

Lentils and fish make such a lovely couple! Take the basic ideas from this recipe, and adapt it yourself.

To feed four, you need four fish fillets (sea bass, rainbow trout, for example). A chopped onion, two sliced garlic cloves, a lemon, 150g Puy lentils, 100ml fish stock and 100ml white wine.
Fry the onion and garlic in olive oil until soft.

 Add the lentils and stir. Pour in the wine and the stock. Bring to the boil. Cover and reduce to a simmer for 30 minutes, until the liquid has been absorbed. Pre-heat the grill. Brush the fish with oil, squeeze over some lemon juice, and season. Grill the fish for 3-4 minutes on each side, so that they are ready at the same time as the lentils. Garnish with parsley and lemon wedges.

2. Thick and warming: Lentil and Tomato Soup

This velvety soup takes its character from marjoram and thyme, so be generous with the herbs. Those who smell this cooking will end up loitering around the kitchen.

For this, you need one big chopped onion, 3 chopped carrots, a tin of tomatoes, 225g red lentils, a tablespoon each of dried marjoram and thyme, a bay leaf, stock (the amount depends on the consistency you like, and a small glass of sherry if you want.

Fry the onion, carrots and garlic until soft. Add the lentils, then the stock and herbs. Simmer for 30-40 minutes until the lentils are soft. Blend with a hand-wand or in a blender until velvety. Add the sherry and re-heat on the stove top for 15 minutes or so. To serve, put some grated cheese at the bottom of a bowl, and ladle the lentil soup on top. Serve with crusty bread.

3. Quickest ever: Children's Lentil Shepherd's Pie

Turning lentils into a main meal for young palates doesn't get simpler than this. The cheesy topping helps win fans if your kids aren't used to lentils.

You need 125g red lentils, 600ml water, a stock cube, small onion (chopped) and a clove of garlic (crushed). You also need some cooked, mashed potato and grated cheese to go on top.

Put everything (except the potato) in a pan, and bring to the boil. Simmer for 40mns. Add some cornflour to thicken if necessary. Then spoon the lentil mixture into heat-proof dish, top with mashed potato and brown under the grill.

4. Tasty and filling: Classy Lentil Salad

This is posh nosh. The wonderful combination of flavours makes plenty of left-overs, so you can please your guests, and then polish off the rest the next day.

You need 250g of Puy lentils, olive oil, one yellow pepper (chopped), 240g sundried tomatoes, 200g feta cheese, and some parsley.

Cook the Puy lentils in double their volume of water or stock, for 15-20 minutes. Gently cook the peppers for about two minutes, to soften. Add the sundried tomatoes and cook for another minute or so. Then mix all the ingredients together. Drizzle the salad with extra virgin olive oil and balsamic vinegar before serving.

So there you have it - four of the quickest and tastiest ways to include lentils into your menu. Just wait until you see some the classier incarnations - spicy dahls, hearty Italian stews, classic curries...

Thanksgiving Dessert - How to Bake a Pumpkin Cream Cheese Cake

When it comes to making a dessert for our Thanksgiving holiday meal, I enjoy baking a homemade pumpkin cake with a delicious cream cheese filling.

This cake will take some time to make, but your time will be well spent. I guarantee you that you will get a lot of compliments from your family and friends once they taste it. If you have any left-overs, you will want to store them in an airtight container inside your refrigerator.

Pumpkin Cake Recipe

Cake Ingredients:

2 1/2 cups all-purpose flour

2 teaspoons baking powder

1 1/2 teaspoons ground cinnamon

1 teaspoon baking soda

1 1/2 cups granulated sugar

3/4 cup butter, softened

3 eggs

3/4 cup solid packed pumpkin puree

1/2 cup cold milk

1 teaspoon vanilla extract

Preheat oven to 350 degrees. Spray a deep dish cake pan with nonstick vegetable cooking spray. In a large bowl, combine the flour, baking powder, cinnamon, baking soda and salt, until they are well combined; set aside. In another large bowl, cream together the granulated sugar and softened butter, until they are creamy. Add in the eggs, pumpkin puree, milk and vanilla extract, beating well after each addition. Slowly add the flour mixture into the wet ingredient mixture, mixing well until all ingredients are combined.

Cream Cheese Filling Ingredients:

1 (8 ounce) package cream cheese, softened

1/4 cup granulated sugar

In a medium-sized bowl, whip together the softened cream cheese with the granulated sugar until smooth. Spread 2 1/2 cups of cake batter evenly over bottom of your cake pan. Spoon cream cheese filling evenly over the cake batter. Carefully spread it across the cake batter using a silicone or rubber spatula. Spoon remaining cake batter over cream cheese filling, spread evenly using a silicone spatula. Bake in your preheated oven for 45 minutes or until the cake tester comes out clean. (test the center of the cake.) Cool completely before adding the topping.

Topping Ingredients:

confectioner's sugar

frozen whipped topping, thawed

A few minutes before serving the pumpkin cake, sprinkle your desired amount of confectioner's sugar on top. Cut cake into desired serving pieces and top with a dollop of whipped topping.

A Finger Lickin Dove Recipe

4 dove (debreasted and deboned)

1/4 stick of butter

minced garlic(not power and not salt)

Salt and pepper

can of your favorite beer

This recipe is for at the dove lease or deer camp. First of all you want to take the can of beer(unopened) and carefully cut the top of the can off, leaving 1" to 1 1/2" of the can with the top. Pour the beer into a cup(cause we dont want to waste good beer). In the bottom section of the can you will want to leave about an inch of beer.

 Then you will take the Dove meat and put it in the bottom can. Sprinkle the minced garlic in with a little salt and pepper. Put the butter in on top. Now be careful not to cut yourself but slightly crimp the top of the bottom section of the can. Now put the top of the can back on the bottom so that they fit snug. Take the can and place it in the camp fire. Cook for 7-8 min depending on coals. Take can out and allow to cool. Pop a top and you got Finger licking Dove bites. Enjoy.

Marinate venison in yogurt or buttermilk. ( The yogurt or buttermilk will help break down the proteins in the meat to make it more tender)Then wash thoroughly

2 lbs. Marinated venison meat

2 tbsp. olive oil

1 cup chopped celery

1 diced medium onion

6 med potatoes cubed

12 small carrots

1 tsp. Garlic powder

2 bay leaves

1 tsp. salt

1/2 tsp. pepper

1 tbsp. sugar

1/2 tsp. paprika

1 tsp. oregano

1 tsp. thyme leaves

1/4 tsp. nutmeg

1 cup red wine

Brown the cubed meat in oil; add two cups of water, along with all ingredients except carrots and potatoes. Cover and simmer 1 1/2 hours. Remove bay leaves, add carrots and potatoes, cook another 30-45 minutes or until tender.

The Best Homemade Pickling Spices

Canning recipes generally call for "Pickling Spices" in preserving dill pickles, sweet pickle or perhaps sour pickles. Actually anything that you pickle you will need to use a similar spice even if it is pickled vegetables.

You can easily go to your local supermarket and purchase a readily made supply of pickling spices however I for one like to variety my mixture according to the pickling that I intend to do. Being involving in canning and preserving food for a long time I have accumulated several favorite recipes for pickling spices. The usual ingredient food in most commercial spice mixes are mustard seed, cinnamon, allspice, bay leaves, clove, dill seed, ginger, coriander, peppercorns, mace, juniper berries and cardamom. The particular one that you buy may contain any or all of these spices. In addition, those people who desire a hotter spice mix may care to add items such as crushed hot peppers.

Below I have listed my favorite recipes that contain the basic ingredients. These spices in the mixes that I list can be varied to suit your particular taste depending on what you want the final product to taste like.

 Basic Home Made Pickling Spice

2 tablespoons of mustard Seed

1 teaspoon of ground ginger

1 tablespoon of whole allspice

1 teaspoon of dried red pepper flakes

2 tablespoons of coriander seeds

1 crumbled bay leaf

2 whole cloves

1 2 inch cinnamon sticks

To begin these recipes combine all the above ingredients and mix well. Store them in an airtight jar or container. Use in creating your favorite pickle recipes wherever it called for pickling spices. This recipe will make 1/3 of a cup.

Spicier Homemade Pickling Spice

1 Tbsp. of celery seeds

1 Tbsp. of white peppercorns

1 tsp. of black peppercorns

This particular recipe is a bit spicier then the previous one. Merely combine all the listed ingredients together, mix well and store them in an airtight container that remains in a cool, dry location. When you want to use it just place the desired amount of the spices in cheesecloth and use it in your recipes.

Now you have your own dry mix recipes for pickling spices. There is no longer a chance of running out and you may perhaps save some money in the process. Good luck.
