Food - Do You Know Your Pasta?

Let's take a closer look at all the various kinds of pasta which is ready to eat and what they are used for.
Spaghetti. This is an easy one. It's one food that we all know and love. Spaghetti comes in a box, or a bag, in long thin strands. You cook it in boiling water and mix it into your favorite spaghetti sauce recipe.
Ravioli. Here is another pretty easy one for everybody. Ravioli is a small, square shaped pasta that is stuffed with several different fillings like meat, cheese, mushrooms, sausage, etc. Ravioli can be topped with tomato sauce and can even come toasted.
Macaroni. One of the all-time favorites! Macaroni is a small, hollow tube pasta. It is used mainly in cooking macaroni and cheese.
Cannelloni. Cannelloni is also a hollow tube pasta, but it is much larger than macaroni. Cannelloni is stuffed with different meat sauce mixtures and also will have various cheeses baked in the middle.
Linguine and Fettuccine. These pastas are know as ribbon noodles due to the fact they are long, stringy and flat. They can come in many different lengths. These noodles are a delicious food with creamy sauces mixed onto them such as Alfredo sauce.
Tortellini. Tortellini is yet another type of stuffed pasta. They come in half circle pieces that are folded over and stuffed with meat, cheese, sausage, or other ingredients. You can also pour your favorite sauce over the top of this delicious food.
Vermicelli. Vermicelli is a very fine, thin string of pasta. It is also known as "angel hair" pasta. It can be used with a creamy sauce of your choice, or used with other items such as crab, or shrimp. Many times vermicelli is formed together to form a type of nest that will hold the crab, or shrimp on top of it.
Conghiglie. This pasta is shaped like small shells. There are many different sizes of conghiglie. From tiny pasta shells that are good for using in soups, to larger sizes that can be stuffed. This type of pasta is a favorite food in pasta salads.
Farfalle. Farfalle is a pasta that is bow shaped and also used mainly in different pasta salads.
Fusilli. Fusilli is a thin spiral shaped pasta that is good in pasta salads. It is also good with different styles of sauces.
Lasagna. Lasagna is perhaps the best of all the different pastas. These are long, wide strips of pasta that are layered with fillings between them. These fillings can include meat, sausage, cheese, mushrooms and about anything else you can think of. More cheese is piled on top and then baked in the oven.
This list should help you the next time you see a pasta that you're unfamiliar with. No matter what shape or size, pasta is a favorite on everyone's list of great tasting foods!

Luak Chye, Sambal Lengkong & Kuih Pie Tee

Luak Chye (MIXED VEGETABLE PICKLE IN MUSTARD DRESSING)


Ingredients

85 g Young ginger, peeled and thinly sliced
1 Carrot, skinned and thinly sliced
2 White radish (daikon), skinned and thinly sliced
3 tsp Salt
1 tbsp Sugar
455 g Chinese mustard greens (kai choy), thinly sliced
3 tbsp French mustard
Pickling Mixture
115 ml Vinegar
85 ml Water
4 tbsp Sugar
¾ tsp Salt

Method

Combine young ginger, carrot, white radish, 1 tsp salt and 1 tbsp sugar. Set aside for ½ hour. Then rinse and squeeze dry with a piece of muslin. Spread on a tray and leave in a sunny place for an hour. Repeat process with the mustard greens, using 2 tsp salt. Combine pickling mixture ingredients and boil in an enamel pan for a minute. Remove from heat and set aside to cool. Blend pickling mixture with French mustard. Put all vegetables in a porcelain jar and pour in the pickling mixture. Stir to combine.

Kuih Pie Tee (SHREDDED BAMBOO SHOOTS IN PATTY CASES)


Ingredients

Patty Cases
1 Egg, lightly beaten
225 ml Water
a pinch Salt
115 g Plain flour, sifted
Cooking oil for deep-frying

Filling
455 g Streaky pork
680 ml Water
a pinch Salt
225 g Small prawns, shelled and deveined (keep shells)
4 tbsp cooking oil
2 tbsp Garlic, peeled and pounded
1.2 kg Bamboo shoots, boiled tender, and finely shredded
300 g Jicama (bangkuang or yam bean), peeled and finely shredded
2 Firm bean curd (taukwa), cut into thin strips and fried

Seasoning
1/2 tsp Salt
1/2 tsp MSG
2 tbsp Sugar
2 tbsp Yellow bean paste (taucheo), pounded

Topping
225 g Crab meat, steamed
225 g Prawns, shelled and fried with a pinch of salt and finely diced
3 sprigs Chinese parsley (coriander leaves)
4 tbsp Garlic, pounded and fried crisp
2 Eggs, fried into thin omelets and shredded

Method

Patty cases making;
Combine egg, water and salt in a bowl. Pour mixture into the flour and mix to a smooth batter. Sieve into a bowl and leave to stand for ½ hour. Heat oil and when oil is hot dip the kuih pie tee mould in for 2 minutes. Now dip the mould into the batter and return it to the hot oil and deep-fry until batter is light brown and retains its shape when it slips away from the mould. Drain on absorbent paper.

Filling making;
Cook pork in 455 ml water and a pinch of salt for ½ hour. Remove and cut into fine strips. Set aside and retain stock. Pound prawn shells. Add 225 ml water and mix well. Strain and set aside prawn stock. Heat oil and fry pounded garlic until brown. Then add seasoning ingredients. Stir-fry for ½ minute. Add bamboo shoots and jicama, prawn stock and pork stock. Cook for 45 minutes over moderate heat. Add prawns, pork and bean curd strips. Stir and cook until almost dry.

Serving
Place filling in a bowl. Place topping ingredients in another bowls. Fill patty cases with filling and sprinkle over with a variety of topping. Serve with chili sauce.

Sambal Lengkong (CRISPY FISH GRANULES)


Ingredients

1.2 kg Coconut, grated, squeeze to extract thick milk then add 225 ml water, squeeze for thin milk
225 ml Water
1.2 kg Wolf-herring (ikan parang), washed
2 tsp Salt
5 tbsp Sugar, mixed with 3 tbsp hot water
10 Kaffir lime leaves (daun limau purut)
Rempah
340 g Shallots, peeled
8 Candlenuts, crushed
3 Red chilies, seeded
55 g Galangal, peeled
6 stalks Lemon grass, finely sliced

Method

Combine rempah ingredients and pound until fine. Place wolf herring in a deep dish. Pour in the thin milk and steam over high heat until fish is cooked. Set aside and retain the coconut¬ fish stock. Remove fish and set aside. Combine the coconut¬ fish stock with thick milk, rempah paste and salt. On a separate plate, debone and flake the fish very finely and return the meat to the coconut-fish stock mixture. Pour the fish mixture into a heated wok and fry over a moderate heat until almost dry. Reduce heat to very low and add in sugar syrup and lime leaves. Fry until crispy and light brown.

Fat Loss 101: How to Lose Fat Fast

The key to losing significant amounts of weight is to burn fat effectively while building muscle and increasing flexibility. This means you can still lose weight without spending 7 days a week at the gym or giving up all of your favorite foods.

The first step you need to take is to set a realistic goal for your own personal weight loss. Calculate your BMI (body mass index) using any of the widely available BMI calculators online. Knowing your BMI will give you a general idea of the healthiest weight for you and help you set a realistic, achievable goal.

Now that you have goal to work towards, you can set in motion the necessary steps to reach it. The biggest change you need to make to lose significant amounts of fat is to change your eating habits and change them for good. Diet & Nutrition: To develop and maintain a high metabolism (the rate at which your body burns calories) most health experts recommend that you eat 6 small meals each day. The goal is to complete 30 minutes of moderate cardio at least 5 days per week, or 20 minutes of vigorous activity 3 days per week.

Doing cardio exercise only, however, can have negative effects on your weight loss and cause you to burn muscle instead of fat. Strength training will prevent this and give you that fit toned look that is so desirable. Muscle tissue also helps the body burn calories and maintain a high metabolism. Again, if you are new to exercise or live a fairly sedentary lifestyle you will want to start slow and work your way up to three 30 min strength training exercises per week. You do not need to ever step foot in a gym to complete either type of workout!

Strength training includes exercises that use weight for resistance. This doesn't mean you have to always pick up a dumbbell or find a weight machine. Your own body weight can be one of the most effective tools in strength training, and you don't even have to leave the house to do it! Pushups, sit-ups, lunges and squats can all be done right in your living room while you watch the news or favorite tv show. Remember to start slow, use proper weight and take breaks for rest. Start off with a single set of 10-12 repetitions for each move and gradually add another set and another until you can complete 3 sets of 12 reps for each muscle group.

Combining healthy eating habits with cardio and strength training will help you shed pounds quickly and efficiently. You will look better, feel better and gain self confidence by making small changes to your lifestyle.

Remember these key points to keep yourself on track and watch the pounds melt off:

• Buy Healthy Foods - If you don't have the junk food in your home, you won't have access to it when a craving hits. Keep healthy alternatives in stock and ready to eat.

• Prepare meals in advance - It is easier to make a healthy decision for lunch if you have prepared items that you can grab and go.

• Eat every 3 hours - Don't wait until you are starving to eat something. Have a snack ready 2-3 hour after breakfast, lunch and if you want, after dinner.

• Take Healthy Food with You. Take food to work, to school, to the movies, etc. This ensures you have a healthy option on hand and won't be as likely to give in to fast food.

The Truth About Calories

The Wacky Eating Habits of a Toddler

Once your child begins to leave the world of baby food behind, meal times can be a roller coaster ride. Toddlers are notorious for being fickle and picky eaters. But, how you handle your toddler's eating habits at this age can have an impact on their eating habits for life.
Toddlers thrive on routine, including mealtime routines. When you disrupt this routine, it can wreak havoc. 

Unfortunately, sometimes this need for routine means that your toddler wants to eat the same food at every meal for six weeks. Don't obsess about this, but do continue to introduce new foods. For instance, if the favorite is macaroni and cheese, you might try switching the menu to the same macaroni noodles but with a little butter instead of cheese sauce. Then add some grapes or apple slices, and see how it goes. Lie about the name if you need to (this is macaroni and butter cheese, yum!), but offer some alternatives.

My experience has been that alternatives will only be tolerated if the rest of the routine is maintained. So, I never try to get a toddler to eat a brand new food in a restaurant. Only in the privacy of my home, where she can sit in her usual seat, at her usual time will I offer some new food. The main point here is that you must continue to offer other foods. If you are content to let them munch on French fries and mac and cheese forever, they may never be willing to try new foods.
One of the best ways to get your toddler to try new foods is to eat them yourself. My daughter wants anything I'm eating if I haven't offered it to her. So, when she asks to try it, I grudgingly give her a few bites of my food, making sure she understands that I was really enjoying it, but am willing to share. After a couple of days of this, she is ready to eat the same food, calling it her own.

Don't lose hope- nutritionists say that most children get a fairly well rounded diet if one is offered to them. Just find the healthy foods they will eat, and offer those more often than the less healthy ones. But, keep trying those new foods so that your child is reminded that there are more things to eat than macaroni and cheese!
