Baked Pasta with Gorgonzola

INGREDIENTS

* 1 pound penne pasta (or sub your favorite similar pasta)
* 2 tablespoons olive oil
* 4 ounces portobello mushroom(s), cut into 1/2 inch pieces
* 2-3 roma tomatoes
* 1 teaspoon dried basil
* 1 teaspoon dried oregano
* 2 cloves garlic, minced
* 1 (26 ounce) jar spaghetti sauce (add more for moister bake)
* 4 cups shredded mozzarella cheese
* 4 ounces Gorgonzola cheese, crumbled
* 4 ounces shredded parmesan cheese


1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Pour a glass of ice water over the pasta to stop the cooking, but do not rinse thoroughly. Blanch roma tomatoes in boiling water for approximately 30 seconds; peel and crush.

2. Preheat oven to 350 degrees F. Coat a 9 x 13 glass pan with olive oil. Heat 2 tablespoons olive oil in large skillet. Add mushrooms. Cook for 2 minutes then add basil, oregano and garlic and cook 1 minute more. Add sauce and crushed tomatoes to mushroom mixture and stir.

3. To assemble, pour enough sauce in the bottom of the pan to cover. Combine the remaining sauce and the pasta. Place one-third of sauced noodles on top of sauce in pan. Top with 1 cup of mozzarella and one-half of the gorgonzola. Repeat for a second layer. Put the final third of the noodles in the pan and top with the final 2 cups of mozzarella.

4. Bake for 30 to 45 minutes, or until cheese is browned. Serve.

Easy to make Baked Pasta on Oven


INGREDIENTS

  • pound/450 g rigatoni pasta
  • tablespoons/60 ml extra-virgin olive oil
  • large eggplant, cubed
  • 10 large sun-dried tomatoes, chopped
  • 15 infornate olives, pitted and chopped
  • dried chile peppers, crushed, optional
  • cloves garlic, chopped
  • (25-ounce/750 ml) jar tomato puree
  • Salt
  • 12 ounces/400 g freshly grated mozzarella
  • Smoked scamorza cheese, as much as desired, roughly chopped
  • Freshly grated Parmigiano cheese, for sprinkling

DIRECTIONS

Preheat the oven to 400 degrees F. 

While the rigatoni cooks in salted boiling water, prepare the sauce. In a saucepan heat up the olive oil and saute the eggplant, sun-dried tomatoes, olives, chile peppers, if using, and garlic, for a few minutes. Add the tomato puree and salt. Let the sauce cook for approximately 10 minutes on medium heat. 

Drain the rigatoni; add the pasta to the saucepan, sprinkle with some Parmigiano and cook for another 30 seconds. Then place 1/2 the rigatoni in a baking dish, adding a layer of 1/2 the mozzarella, 1/2 the scamorza and another sprinkle of Parmigiano cheese over the pasta. Add the remaining rigatoni, and follow with a final layer of all the cheeses. Bake for 20 to 30 minutes or until golden brown.

Three Traditional Italian Recipes

Traditional Italian food is very diverse in both ingredients and flavor. Many people tend to associate Italian food with the thought of pastas and tomato-topped bread, but there is much more to Italian cooking than that! Soups, savory breads, saucy meat dishes, and delicate desserts are just a few of the great dishes that Italian cuisine has to offer. This article features three of my favorite authentic Italian recipes. I hope you enjoy them!



Sicilian Succo

Ingredients:
4 cloves garlic (chopped)
3 (29-oz) cans tomato sauce
4 (6-oz) cans tomato paste
1 tbsp chopped parsley (fresh) + additional 1 tbsp
1 tbsp chopped fresh basil (fresh)
2 lbs ground beef
1 lb ground pork
1 cup dry bread crumbs
1 cup grated Parmesan cheese
1 tsp garlic powder

Directions:
In a large pot, mix the chopped garlic, tomato sauce and paste, 1 tbsp parsley, and basil. Bring this sauce to a boil, then turn the heat down to low to simmer the sauce. In a bowl, mix together the pork, beef, bread crumbs, parmesan cheese, 1 tbsp parsley, and garlic powder. Mix this together well, then form into balls roughly the size of a golf ball. Fry the meatballs in a skillet in very hot olive oil until they are thoroughly cooked. Add the meatballs to the sauce mixture and cover. Allow it to simmer on low for about four hours. Serve over noodles of your choice.

Italian Sausage Soup

Ingredients:
1 lb Italian sausage
1 garlic clove (minced)
2 (14-oz) cans beef broth
1 (14.5-oz) can Italian-style stewed tomatoes
1 cup sliced carrots
1 (14.5-oz) can great Northern beans (un-drained)
2 small zucchini (cubed)
2 cups packed spinach (rinsed well and torn into pieces)
1/4 tsp ground black pepper
1/4 tsp salt

Directions:
Use a large stock pot to brown the sausage and garlic. When the sausage has browned, add in the broth, carrots, tomatoes, and salt and pepper. Reduce the heat to low, then cover the pot and simmer for 15 minutes. Add in the beans (including the liquid) and the zucchini. Cover the pot again and simmer for another 15 minutes (or until the zucchini has become tender). Remove from the heat, then add the spinach. Put the lid back on so the heat from the rest of the soup cooks the spinach (about 5 minutes). Serve hot with a nice Italian bread.

Tiramisu

Ingredients:
1 cup sugar
1/2 cup sweet Marsala wine
6 egg yolks
1 lb Mascarpone cheese at room temperature
(Mascarpone substitute: 2 (8-oz) packages cream cheese, ½ cup heavy cream, 5 tbsp sour cream)
1 1/2 cups hot water
5 tsp instant coffee powder
1/2 cup coffee-flavored liqueur
12 ounces ladyfingers or sliced sponge cake
Unsweetened cocoa (for dusting)
1 ounce semi-sweet chocolate (grated) - optional

Directions:
In a bowl, mix 1 1/2 cups of hot water with the instant coffee. Stir until the coffee has dissolved, then add the liqueur. Dip in 1 ladyfinger at a time, quickly turning it to coat. Remove it from the liquid and place it on the bottom of an 8 x 8-inch dish. Line all coffee-coated ladyfingers side by side until most of the pan's bottom is covered. Pour half of the mascarpone cheese (or cream cheese mixture) over the top of the ladyfingers. Add another layer of coated lady fingers and cheese. Refrigerate this for about 4 hours, or until the dessert is firm. Just before serving, dust the top with cocoa. Garnish with the grated semi-sweet chocolate (if desired) and cut into squares to serve.

Traditional Italian Risotto Recipes

Risotto is a term for traditional Italian food that use rice as the main ingredient. Risotto recipes are made by combining short grain rice with a variety of ingredients to make a delicious dish which is commonly served prior to the main course for dinner. However, risotto may be served with classic dishes such as Ossobuco alla Milanese, which is a popular veal and vegetable dish made combined with stock and white wine. When served with the veal dish, it is served as an entree. When making risotto, a vegetable, meat, or fish stock may be used.



The reasoning behind using short grain rice to make risotto, is that it has a more sticky consistency than long grain rice. When it's cooked, the starches in the rice are released, creating a much thicker sauce than long grain rice. Each person has their own variations of the dish, and the type of rice used to make risotto, varies with each cook. Cooks in Italy usually use one of several varieties of rice for their risotto recipes, and the flavor and consistency of the dish will vary depending upon which one is used. Vialone Nano and Carnaroli are both high quality products, but are more expensive than some of the others. Carnaroli is more difficult to be overcooked, and is a good choice for anyone who isn't experienced in making risotto dishes. Roma, Baldo, Padano, and Arbario rice may be used. To create a dish with the best consistency, Vialone Nano is the choice of many cooks, since it absorbs liquid and spices better than most varieties. Originario and the other varieties previously mentioned are suited well for making soups and other dishes.

Hundreds of risotto recipes are available, but no matter which condiments and additional ingredients are used, they all begin with cooking the rice. The soffritto, or base, is started by combining either garlic or onion with butter or olive oil to coat the rice. If using olive oil, pure virgin olive oil is the best. The rice mixture is then combined with red or white wine, depending upon your personal preference. When the wine is absorbed by the rice, the stock is added, a little bit at a time while the rice is stirred to prevent sticking. When the liquid is absorbed, a mixture of butter which has been diced, and grated Italian Parmigiano Reggiano cheese are stirred in to give the risotto a cream-like texture. For risotto to be cooked in the correct manner, it should be al dente without excess moisture. When making a seafood or fish risotto, cheese isn't usually added, since it overpowers the flavor of the fish.



Risotto may be made in various combinations, depending on personal preference. Those who don't live in Italy sometimes make their own versions of the dish, but true Italian risotto is made basically the same way, with a variation on some of the ingredients. Seafood risotto may include shrimp, salmon, tuna, or prawns. A tasty combination of vegetable risotto may use mushrooms, artichokes, asparagus, or any fresh vegetables in season. Meat risotto may contain chicken, lamb, or beef. The most important consideration when making risotto is to take the time to make it properly for the best results.

Traditional Italian Recipes

Most traditional Italian recipes will differ from one region or part of Italy to the next. There are twenty (20) separate regions in all and there are provinces within each region which means many different styles and flavors of cooking. This regional variation is what Italy is known for; it is the local ingredients which give each unique flavor - the spice of life.



Pesto is a great example of how a basic recipe is modified by each region. The basic most famous green pesto comes from the Liguria (northern) area where the fresh basil is crushed into a paste and mixed with olive oil, Parmigiano (cheese) and pine nuts. More currently introduced, the red pesto has sun-dried tomatoes added to the traditional mix in the Cinque Terre area, while the spicy Sicilian variation can contain chilies, cappers, raisins, anchovies, fennel and mint. Is your mouth watering yet!

The Northern regions' recipes also tend to use less olive oil, pasta and tomato sauce in favor of more rice, polenta and cheeses for cream sauces. The local recipes seem to express a pride of the unspoiled countryside with the inclusion of local game or wild fowl like rabbit or quail. The overall rule is if it grows well in the area, it will usually end up or be on the plate.

Italian cooking has two sides with one being tradition and the other innovation. Most regional variations take a traditional Italian recipe and add local flavor or develop a new use to create a taste unique to that region. Unlike typical Italian restaurant food found in North America traditional Italian dishes offer much more variety. While you can find the well known offerings of pizza and spaghetti you will find that taking time to sample local recipes cooked by local chefs worthwhile as it enhances the enjoyment and memories of your experience.



To us, when you refer to traditional Italian food the picture or image of making age old family recipes in the kitchen with your grandmother or mother spring to life. This type of cooking not only is delicious but is also the ultimate comfort food.

So when considering replicating or creating traditional Italian recipes in your own kitchen you must take into account the region of Italy that the recipe originated and the specialty ingredients. It will still taste great but may vary as a result of the type of ingredients and of course the experiences of the chef.

Ingredients: 1 tbsp. butter or margarine, 1/2 large onion, 1 can undiluted reduced fat cream of chicken soup,1 container refrigerated reduced fat alfredo sauce, 1 jar diced pimiento undrained, 1 jar sliced mushrooms drained, 1/3 cup dry white wine, 1/2 tsp. dried basil, 1package frozen chopped spinach thawed, 1 cup cottage cheese, 1 cup ricotta cheese, 1/2 cup grated parmesan cheese, 1 large egg lightly beaten, 9 lasagna noodles cooked, 2 1/2 cup chopped cooked chicken, 3 cups shredded sharp Cheddar cheese divided

Method:

1. Melt butter in a skillet over medium-high heat.

2. Add onion, and sauté 5 minutes or until tender.

3. Stir in soup and next 5 ingredients.

4. Reserve 1 cup sauce.

5. Drain spinach well, pressing between layers of paper towels.

6. Stir together spinach, cottage cheese, and next 3 ingredients.

7. Place 3 lasagna noodles in a lightly greased 13 x 9 inch baking dish.

8. Layer with half each of sauce, spinach mixture, and chicken.

9. Sprinkle with 1 cup Cheddar cheese. Repeat procedure.

10. Top with remaining 3 noodles and reserved 1 cup sauce. Cover and chill up to 1 day ahead.

11. Bake at 350°F. for 45 minutes.

12. Sprinkle with remaining 1 cup Cheddar cheese, and bake 5 more minutes or until cheese is melted. 13. Let stand 10 minutes before serving.
